Books are just a guide from another crocheters perspective.  The turning chain causes problems making the edges look sloppy if you chain 3. I have written about this on my crochet blog, in detail on a few blogposts. It is preference. You can pick what technique you like best. Sometimes I will chain 1 and pull up a long loop to eliminate the chain. When you make an afghan or hat, you will understand what I am talking about with the chain.

that does make sense. i was trying out my first double crochets and the beginnings look too big (between chains and the first stitch) compared to the rest of the row.
If I chain like you mentioned, do I then hook the next stitch? And what after that, always the next?

You can double crochet in the 3rd chain from the hook and then learn some of the modifications later. When you are working double crochet, you continue to double crochet in each chain across.
