It is visible in very simple terms not because of the sonic boom but because of Prandtl-Glauert Singularity. It has nothing to do with the jet breaking the sound barrier it is just sometimes happens at the same time. The reason for the cloud in very very simplified terms is because the water droplets cool very quickly creating the cloud and the shape of the cloud is a different story.
