I'm not sure if it's exactly the same in Germany, but here in Holland it's officially a catholic holiday. "Fat tuesday" was the day before a week long religious fast in which all excess food was eaten which went coupled with a celebration. The name "carnaval" literally translated means "Farewell to meat" ^^
Although many sources say the practice predates Christianity and like Christmas it was simply co-opted by the church.

They don't know how to make pancakes. So they dress up like idiots and run around in circles.
