It isn't about how much you know, it is about the evidence pertinent to the question. If you know the evidence pertinent to the single question very well, that is enough to have an expert opinion.

Open-minded or closed-minded atheist? Most I know are open-minded, which is why they are atheist. It is very rare, however, to find an open-minded Christian, no offense. It is just my own decades' worth of experience.

Sure it's possible gods exist outside my knowledge... it's also possible pixies, thetans, and alien Reptoids that camouflage themselves among the royal family exist there as well. And hey, a lot of people believe in that junk too.

Kinda wish I met this lady irl... To represent my knowledge I'd draw a circle bigger than the world knowledge circle, then look her dead in the eye and say in a booming voice, "I am the god Athena in human form, out of my way puny mortal!"
