  • @FreqBand Thank you for stopping by and commenting ;) I appreciate it. on these enchiladas I am using Queso fresco, which is a crumbly cheese, Sometimes I will use Ranchero cheese when I bake the enchiladas in the oven, that cheese melts beautifully :) Have a wonderful day.

  • @blgrieb Hi :) just use the guajillos plus the spices. :) it will be barely mild..not hot. thats what I used to do for my kids. :)

  • @Ghenghy Thank you for stopping by :) yes it is! If you add some apple cider vinegar then it would be Pollo en Adobo.. it gives it a good flavor!! check out my recipe "Pollo en Adobo" im sure you will enjoy it :)

  • Try plating it on a heat-proof plate, and quickly bake in the oven to soften the cheese and onions, just before serving.

  • Thanks for the quick response. Just made shrimp enchiladas last night again. Sauce is beautiful paired with it. I do want to try a mild sauce so kids can begin to try more stuff. Thanks again.

  • This is my third time making this sauce, awesome. How could I make it more mild? Could I cut it with tomato sauce, or try different chile proportions? Also, can I substitute fresh roasted jalapenos and pasillas instead of boiled/dried? I don't need to make it mild, but I want to make one for my 3 and 5 year old.

  • Can you tell me if you use dry chicken bouillon cubes andif so how many or is it three tablespoons of bouillon mixed with water. Thanks..can't wait to make these

  • everything was perfect up until when you put the salad on the plate, i like salad but not with enchiladas, i would of preferred some mexican rice and some mashed pinto beans. very good and informative video though
