So after testing for a while I noticed that it is best to either use double thin lines in the middle with thicker blocks on the flanks for outflanking, or if the faction has stuff like axemen then position all the phalanx units in double lines and use the axemen to perform or possibly intercept flanking maneuvers.
I only performed about 10 tests, many of which were offline so I will give you more updates on this as I test more later if you like

I found that stacking 2 units in long lines 3 ranks deep one behind the other gets the desired effect since even if the front line pulls out their swords and shield the back line keeps their sarissas, but this formation is less maneuverable
Hi, I can't remember which video it was but in one of your videos you stated that a phalanx formation should be deploted 6-8 ranks deep to bring all their sarissas to bear, but I tried a few tests and noticed that only the front 3 lines of sarissas ever get used and the back lines point their sarissas in the air even if the front lines fall.

The more densely ranked a phalanx, the more resilient its' morale - it can fight longer before routing and resist sudden shocks better (like rear charges). The narrower the front the more manoeuvrable the unit and so the better it can adapt to new plans. Additional ranks mean the unit won't narrow as men die, widening the gaps to adjacent phalanxes in the line. Finally, though a phalanx using Greek-style spears deploys a max of 3 ranks a time, pikemen actually deploy 5 ranks if you look closely.

Yes, since we had 11 people turn up it made sense to round it off to an even number to make the match-making more convenient int the Round Robin stage.
