Mexican Quinoa Salad with a Cilantro Lime Vinaigrette
Serves 4 to 6

2 ½ cups (460 g) cooked quinoa
½ medium red onion, diced
2 roma tomato, seeded and diced
½ cup (85 g) black beans, drained and rinsed
½ cup (85 g) frozen corn, thawed

vinaigrette:
1 shallot, minced
1 garlic clove, minced
½ bunch cilantro, minced
2 teaspoons (10 mL) cumin
1½ teaspoons (7.5 mL) honey
2 limes juiced
2 tablespoons (30 mL) white balsamic vinegar
⅓ cup (80 mL) extra virgin olive oil
salt and pepper to taste

garnish:
queso fresco, crumbled

Place quinoa, red onion, tomatoes, black beans, and corn into a large mixing bowl and gently toss together. Lightly season with salt and pepper. Set aside.

Place the shallot, garlic, cilantro, cumin, lime juice, and balsamic vinegar in a small bowl and whisk together.

While whisking, add the oil in a slow and steady stream until fully incorporated. Season with salt and pepper.

Pour the vinaigrette over the quinoa mixture and toss together until well coated.

Sprinkle with queso fresco and serve.

  • what is quinoa? is it a type of beans..or ice? or something?

  • @TheKristinMarie It's actually a grain. It's high in protein, calcium and iron. Apparently, it contains an almost perfect balance of all eight essential amino acids needed for tissue development in humans! Who knew? We thought it was a good for all the "New Year's Resolutionists" looking to eat better. :)

  • i always hear about quinoa and i finally saw it at my grocery store the other day so im curious..what is the texture? is it like rice or pasta? i really want to try it and i think my cockatoos would like it!

  • @m0sas Ha I bet they would love it! Texture is more like a hearty grain. Less like rice or pasta. Try it, you'll like it, and if not...well then, there's always the cockatoos standing by for a nibble? LOL

  • @idaminori @m0sas it's so much better than couscous - it's gluten free and considered a complete protein source (it has a high protein content of 12–18% and contains essential amino acids).

  • @idaminori hmm..ive never tried couscous either.. im just gonna go ahead and try it. i heard parrots love the stuff, my birds are hungry little boogers theyll eat anything, lol! thank you for helping me! :)
