what would happen at 8:40 if white plays Bxe4, Nxe4. Kxh6. I know he is a bishop down but the h-pawn isn't that easy to stop for the Knight.

i think u are right if bd7 is played earlier then it can get on the f1-a6 diagnol or d1-a4 prevents Nc4 and b3

In the Nc4 variation, i understand why white can't take the knight, but it seems as if the knight isn't very useful at c4 either. Can black win eventually in that variation if bxc4 wasn't played?

Another defensive try white has in this plan is to meet ...Nb5 with Kd3 then if ...Nc3 then a3! This is why Fuscher wants to play a4-a3 first.

With perfect play on both sides, I believe it should be a draw. You simply dont take the a pawn eg 1... Kb5 2. Be6 , a4 3. Kd3
, a3 4. Bf5 , Kc5 5. Ke3 , Ne8 6.
Bd7 , Nd6 7. Ba4 , Kb6 8. Kd3 ,
Ka5 1/2-1/2
Could Black not play Nf6-e8-d6-b5-c3-a2? I don't see how white could use his bishop to defend the pawn there.

Have you looked at Bd7 when the Knight arrives at d6?

what about if instead of promoting, white took the knight first on e4?

In that case black wins with Kxe4. After white promotes black gives a check with queen and trades queens. The pawn endgame that remains is won for black.

Yes, thinking backwards in the sense that we first need to know the goal that we want to achieve before calculating how to get there.
