  • The colours in this are so great! I would feel the need to put this over rice for some reason. I've seen blackened chicken on restaurant menus but have never tried it.

    I wonder if all blackened chicken is spiced with chili? hmm

  • @yoyomax12 I put it on rice, but just took the money shot as is.

    Try googling blackened chicken recipe. I found some that seemed like it would be MUCH better than chili powder. I knew I shouldn't have trusted Taste of Home. I am letting my subscription expire because the recipes are pretty much crap every time. The recipes I found online gave yummy spices like paprika, cumin, thyme, onion powder, etc. I think those flavors would be much nicer!

  • Label reading on "Cajun's Choice," a really snappy Louisiana blackened seasoning I use, it sez "All natural spices (including paprika, red, black, white peppers, oregano), salt, onion, and garlic. No MSG."

    (I'd sprinkle on a waft of MSG, just out of spite...)

  • Looking like a great combination, but I agree with you, it looks heavy on the chili powder. There are some great Cajun "Blackened Seasonings" pre-made, that I play with, "Slap Ya Mama" being an upcoming fave. You shouldn't taste the chili powder, you should just "notice" the twang in the blend of spices.

    A variant you thought of, that I'd pursue: brown the chicken, but don't fully cook it. Let it finish at a slow simmer in the sauce for maybe 10 minutes, so they get to know each other.

  • @BryanAndBaileysZen Nope, I am not a fan of the seafood. If I do eat fish (not very often), it is local fish (aku, ahi, mahimahi) and I just like it fried (or baked if mahimahi) with nothing else done to it. Just Hawaiian salt. Then I eat poi with it :)
