@maciejwrotek: 1)measuring the pH of the item and /or 2) taking into consideration the impact it has on the body's pH and on the blood. Some things that may have a high pH, but are very toxic to the body. Many fungi have a high pH for example and some mushrooms do. But moldy and fungus "foods" are very toxic to the body resulting blood that is loaded with bacteria and fungus, breaking down the body w/ an acidic impact. Back to the House of Health is a great resource for this!
