While he can be considered an antagonist in being an obstacle to overcome, he doesn't actively try to tear the heroes down like Skinner, so Ego is by no means a villain. He shows a great deal of humility and character development in this scene. Even though Gousteau's was his arch-rival, he admitted that he loved the food and stood by what he saw as fresh talent.
