I always put my cake in the freezer before the crumb coat and after, didnt realize you could to help you with any imperfections after the first layer. Thanks for the tip on using your finger to melt away any imperfections once you take it out. Great Tutorial!!

In the video, I was putting the cake in the cooler (it doesn't have a freezer, it's just a cooler), but you can put the cake in the freezer, you just wouldn't leave it as long. The cold is just to get the buttercream firm. Hope that helps!!

Jenniffer, I can't tell you how much I appreciate you sharing your technique! I was just wondering if you have alot of cake slippage when you stack the cakes. I notice you refigerate them frequently, but when its out for pickup/delivery to the customer, do you have any issues with the buttercream melting extremly fast? I just love how it looks like fondant! Hats off to you ! Thanks much!

Hey Melody! Congrats on getting your first call to action from Icing Smiles! My icing is actually very shelf stable so it should be fine; my understanding is all that sugar acts as a preservative and inhibits bacteria growth. My lawyer would want me to tell you that this is certainly not a guarantee and that I take no responsibility to the final outcome! ;-)

I'm so sorry to bother you again, but I ran into a problem this evening. I just completed my 1st Icing Smiles cake today using your kids buttercream. The birthday party is suppose to be tomorrow. I just spoke with the mother, and Brantley Gilbert wants to host a surprise party Friday after his concert. My cake is completely airbrushed, so refrigerating is not an option. It is covered in fondant. Can the cake stay unrefrigerated with your icing until Friday? Thanks!!!

This was so helpful. I made a practice 4 tier cake last night. I really wasn't sure how the icing was so smooth. Can't wait to try this method!!
