Got to throw in some cantaloupe/rock melon to off set the saltiness of the cured meats, cheese, olives and pickled chillies, onions and carrots. Antipasti is purely an appetiser to get the taste buds going. Here in Australia the Italians here always added rock melon to their plates. Another addition is 3 inch celery pieces with slithers of anchovies placed into the celery grooves. An unbelievable savoury sensation!
