  • Putting a glass bowl on a cold tile counter certainly sucks out any heat the cream may have had towards melting the chopped chocolate more quickly. Avoid this loss of heat by putting a few pot holders/kitchen towels/grass trivets. Also, I noticed you edited from milky, spotty, tepid sauce to suddenly stirring a creamy, dark, finished product. C'mon; you're cooks. By the time you got to it, the stuff was too cold to blend well. Oy! Keep it warm.
