Some of my favourite Apps on the iPod Touch:
1. MakeitMine
An App that can change your carrier or banner logo
Install
1. Open Cydia
2. Go to search
3. Type in Make
4. Scroll down
5. Click Make it Mine
6. Install Applications
2. MxTube
An App where you can download videos from youtube on your iPod Touch with no computer
Install
1. Open Cydia
2. Go to search
3. Type in mxtube
4. Click & Install
3. QuickGold
It is the best and the quickest way of launching an App on iPod Touch
Install
1. Open Cydia
2. Go to search
3. Type in QuickGold
4. Click & Install

The new search feature does not include applications in its results I believe. If you want to add that option you can download SpotBright
