Good Eats S3E9P1: Flat Is Beautiful

Y'know, I've never been to NYC but I did come from NY State. I lived in Niagara Falls. Pizza in WNY is good, too. We'd order in ''trays'' (and they were cut in squares). You could get a pie, if you wanted but "trays" were the most popular & common. Excelent stuff. Baked in brick ovens by real family joints. With a large Italian-American influence in WNY, there's plenty of "Real" pizza. I miss it. However, I'm certain NYC pizza would be superior. NY in general is the Pizza State! YUM!

When I was in New York I wanted to get to some place like Lombardi's or one of the billions of Ray's out there for Pizza. We were getting crunched for time and, while attending a Tigers/Yankees game at the old Yankee Stadium, I tried some pizza there... bad idea for a substitution. Oh well... next time. :(

Yeast will feed on the carbohydrates in the flour. True Neapolitan pie crust only consists of bread flour, water, yeast, and salt.

I'm not saying not to use sugar, just saying it aint necessary. Try it once.
