In late September, the Twitter team came to Crushpad to help sort the Pinot Noir grapes from Doctor's Vineyard. The sorting process is used to remove various elements in the grape clusters that would adversely affect the flavors of the resulting wine. Some things that are looked for are raisining in grapes, sunburned clusters, leaves, etc. After the sorting process, these grapes were gently destemmed and transferred to the cold room for a 7 day cold soak.
