「卯の花」というのは大豆から豆乳を搾った後、残る滓を調理したものを言う。そのものは「おから」といい、決して捨ててしまうには惜しい食品である。栄養的にも蛋白質、ビ­タミン、ミネラル、食物繊維に富む。大豆というのは、言ってしまえば完全食品で人間にとって理想的な食物なのだ。「おから」を食物油で炒り、そこへ、いろんな食材と調味料­で調理すると豆乳同様、完璧な料理が出来る。さらに、しかも、美味しい。日本では豆乳から豆腐を作る。この豆腐こそ日本でポピュラーな食品のひとつで大量に流通している。­そこからして、「おから」も大量に排するわけで、食品としてあまり価値の与えられてない、それは、需要からするとあまりにも大量なので、産業廃棄物として、飼料に当てられ­るか廃棄されるのが現状だ。家庭用の豆乳マシーンで出た「おから」を私は利用する。用途は様々だが、そのひとつ、「卯の花」をご紹介しました。

After squeezing the soybean milk, "UNOHANA" means the one that the remaining dregs were cooked from the soybean. The one is says "OKARA", and food at all regrettable to throw it away. The protein, the vitamin, the mineral, and the dietary fiber are abundant in nourishment. The soybean is complete food and ideal food for man if it says. "OKARA" can be roasted with the food oil, and a perfect dish be done there by various ingredients and the seasonings as well as the cooking soybean milk. In addition, it is moreover delicious. The bean curd is made from the soybean milk in Japan. Only a large amount of this bean curds circulate by one of the popular foods in Japan. It is applied to fodder as industrial waste because it is too a large amount of judging from demand or being abandoned is a current state in it from which value is not so given as food because a large amount of "OKARA" is cleared away even there. I use "OKARA" that went out with a domestic soybean milk machine. I introduced the one and "UNOHANA" though the usage was various.
