砂鍋獅子頭

阿基師教你做
【大明星指定菜】

食材:
五花絞肉150g、蛋豆腐半盒、荸薺4顆、洋蔥50g、薑10g、高麗菜8片(做幾顆就幾片)、蛋1顆

調味料:
醬油、香油、米酒、麵粉

做法
1.起滾水鍋,放入高麗菜燙熟備用。

2.取一水晶碗,放入薑末、洋蔥末、荸薺末、絞肉、蛋豆腐抓醃均勻,再加入少許鹽巴、少許糖(鹽糖等量)、少許醬油調味拌勻,最後加入1/3顆全蛋液及少許麵粉混合。

3.將內餡取成雞蛋大小,起180℃油鍋,將內餡下鍋炸制定型有肉香即可盛起撈出瀝油。

4. 預熱砂鍋,將內餡球用高麗菜包起,放入砂鍋中,加入適量清水淹蓋過食材,加蓋煨煮10分鐘。

5. 10分鐘後,加入少許醬油調味,最後以米酒、香油提味即可完成。

小叮嚀:
因為時間不夠的原因,所以使用了高麗菜保住獅子頭

  • 其實豆腐處理不好的話,反而會減損獅子頭的肉香,像這道紅燒獅子­頭,就是沒加豆腐的做法:
