That's called Pascal's wager. Unfortunately it hinges on the assumptions that belief is a choice, that there's no 3rd possibility, that life is meaningless, and that Christianity has a non-zero probability.

If evolution is to be disbelieved, why would God plant all that evidence? Conversely, why would he erase all the evidence for a religion and fault us for not believing it over all the other false religions? All the known universe points to this one being false too.

Would believing in ancient mythology without evidence, in the face of damning evidence against it, and adhering to its strange teachings, or at least the parts I can stomach, make me wise in your opinion?

I can only believe what I think is most likely the truth. Belief is not a matter of preference, or a moral choice. That's a lie of religion, to pass judgment on nonbelievers aka blasphemers without argument.
