This roasting lid baking method for sourdough is much easier than the spraying method used to obtain steam for baking sourdough breads.These loaves were baked using a modified basic white sourdough method, with added evaporated milk and some Whole Wheat flour.   • why do you use the lid ?

  • @azt3c you need to check out my site northwestsourdough and download the free e-book there. I use a lid to hold the steam right next to the skin of the dough, which produces a superior crust.
