PUMPKIN CRANBERRY BREAD

This bread tastes so good. Here is the recipe.
3 cups all-purpose flour
1 tbsp plus 2 tsp pumpkin pie spice
2 tsp baking soda
3 cups granulated sugar
1 15 oz can pumpkin (Libby's)
4 large eggs
1 cup vegetable oil
1/2 cup orange juice or water
I used orange juice
1 cup sweetened dried, fresh or frozen cranberries.
Directions:
Preheat oven to 350 F. Grease and Flour two 9 x 5 inch loaf pans. (Grease and flour well, mine stuck to the pan so be sure and do that.)
Combine flour, pumpkin pie spice, baking soda and salt in large bowl.
Combine sugar, pumpkin, eggs, oil and juice in large mixer bowl, beat until just blended. Add pumpkin mixture to flour mixture, stir just until moistened. Fold in cranberries. Spoon batter into prepared loaf pans.
Bake for 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes, remove to wrie racks to cool completely.

  • Sounds good. let me know how the raspberry tastes it in. Now I want some. I do have a bag of cranberries that I froze.

  • also if i'm going to bake two loafs at the same time, should i up the oven temp more??

  • My husband was talking to the dog. I made this take for a friend to watch because she didn't know how to make it.

  • i just went to 4 different grocery stores and they only sold the dried bagged cranberries cuz the fresh ones are not in season. so i bought raspberries instead. i'm going to make 4 loaves tonight. oh and why do people put vanilla extract in their mixes sometimes?

  • The dried bagged cranberries taste better than the fresh ones. You can use those too. vanilla makes it taste good.
