I think that's the point, she is meant to be a "regular" girl, have you seen the first Dirty Dancing movie? Both have very similar characters.
If she was some model, it wouldn't be as good. It would be the same as every movie.
Its nicer to have a regular girl, getting the guy and having a romance.
Over the stereotypical/ overused storyline where some drop dead gorgeous girl gets the guy.
This is a nice break, shows that every girl has a chance, and that nice girls get the guy!
