Here is an idea to speed things up. If you are going to be using a cast iron skillet as a weight, Why not heat up the second cast iron skillet until it is "red" hot , then spray it with PAM and place it on top of the first pan? You could use non stick aluminum foil as well to keep it from sticking. Wouldn't that sear the top of the potato pancake while the bottom is cooking in the pan?

have you ever tried ringing out the water from the potatoes after you cut them? Then replace a little of the moisture with an egg or something? Im gunna try these

Hey I wanna try this but I'm a little confused. Alright so you put the latka on the cast iron pan with the other pan on top and let it cook for a min, then you flip it over to cook the other side for a min. Then you put it in the stove for how long?

If you are going to bake the Latka,about 20 minutes at 375.If you watch the Latka you can use broiler

Sounds good. You should try hooking up a mirror at an angle above the stove. Then the camera could zoom in on that so we could see what you're doing in the pan.
