This is a longer video of how I constructed my Valentine's cake with instructions included. A little more information is posted on my blog.

Unfortunately, I've had to take my recipes down so I apologize for not being able to help in that area. I recommend a sturdy cake recipe for this style of cake similar to a pound cake.

    Yes, the cakes are on cake boards. it also lends stability to the structure- so the cake doesn't get crushed by the next set of dowel rods, and it's also the reason you sharpen the center structure dowel into a point, so it can go through the cardboard.

    egg whites and powder sugar. cheaper than having to buy meringue powder. add more powder sugar for a thicker consistency, add more egg whites for a runnier consistency. then if you want add cream of tartar to give it a white look (only if you're using it for decorating), in this case you dont have to.

    You make royal icing by combining 3 tablespoons meringue powder (Wilton makes some - try a hobby or cake store), 4 cups powdered sugar and 6 tablespoons of warm water. Blend for about 10 minutes with a hand mixer :)
