You can also use kiwii, I have been using kiwii for alot of years now and it gives the exact sweet tenderness as using a korean pear.

Marinate it really good and throw in a little msg? Or you can ask them for their recipe and mimic it? : )
Here's a secret: most restaurants would probably not use pear puree because they're expensive so try it with either corn syrup or apple juice.
