You are totally wrong man. The consumption of oils may had increase BUT the consumption of trans fat was HUGE and it's the problem (not the polyunsaturated fats)...
And the composition of the plaque is not 27% of saturated fat and 73% of polyunsaturated fat, IT'S WRONG, TOTALLY WRONG!!! Where did you learn this??? The main component of the plaque is LDL cholesterol and a fibrous screed (collagen, elastin).

Trans fat plays a big part in atherosclerosis, but the the predominance of polyunsaturated omega-6 fats (mainly from vegetable seed based oils) in the standard American diet is responsible for a great deal of silent inflammation and exacerbates the process of atherogenesis. I recommend that you read up on eicosanoids to better understand why this is so. LDL isn't cholesterol - it's a lipoprotein "container" that shuttles cholesterol AND fatty acids around the body.

lol I think Italians should have a tremendous tendency to have heart attacks if it was true... The olive oil is the MAIN part of their diet. Ok for the omega 6/omega 3 ratio, but I maintain that the american people are suffering because they eat SO MUCH trans fat...

Just to be clear: olive is a fruit, not a seed like corn, and is comprised of mostly monounsaturated fatty acids. So, using olive oil in place of vegetable seed based oils will have a favorable impact on a person's omega-6 to omega-3 ratio simply by displacing bad oil from the diet. So, use olive oil for sure!
It's the trans fat (like you say) the vegetable seed based oils, and the empty refined carbs that harm Americans so much - these are garbage and should be avoided like the plague.

bro, you should read more about "oil extraction process" its truh free radicals are produce during the process but they are eliminated, Lard, Butter, and stuff like that had also pufas in lower level than veggie oils the differences are the position of the saturated and pufa oil in the glycerol molecule

idk why he told us that the fat in artery plaque is 27% sat. and mostly polyunsaterated, because its not as if when you eat fat it jumps out of your stomache and straight to your veins

and garlic! Italians have a very low rate of heart disease. This is linked to their intake of garlic and olive oil.
