I noticed that, too. I've taken that to mean that he was open to Christianity, too, and perhaps still applied certain aspects to his life (though not by necessarily following a particular denomination). Then again, I'm interpreting, and I'm not certain why he did what he did. :)
He has a wondeful tone here, that he used often at the end of the Beatles, as well as the excellent "All Things Must Pass" album. Love that phasing. Pretty.
From what I recall reading ages ago, George never officially converted to Hinduism or the ISKCON movement--in name, he was still Catholic. Of course, we know very well that he did not practice Catholicism later on his life. I suppose he saw officially converting as a matter trivial to practice itself, which I feel much the same way.
