I like this a lot! I'm just getting into baking, and I never understood why people say making puff pastry is so hard. Soon, I intend to make Millefoglie for one of the italian grad students I work with. Hopefully it'll turn out well (the pastry, and the cake)

Oh my, the apple turnovers look pretty good at 9:42

In 7:29 , that looks like either a small Chinese chef's knife or a Japanese Nakiri. My bet is a Chinese chef's knife because of the edge profile. Anyway, good push-cutting technique.
