Actually, the Caprice's engine doesn't sound at all like a V8 (Police version).
I have that car, an 82 model.

What kind of engine does it have? A V6 or what?

The car in the video either has a V6, or it may even have an L6 (inline). I suspect either the latter, or that the sound of the engine was just later added to the video in the studio.
On the other hand before I got my car, it had the weakest V8 available, which was a 4.4L. The motor is long gone, so I don't know how it sounded. (replaced by a built 350 - 5.7L)

Yeah, they dubbed the engine sound effects in post production. According to Friedkin, the live sound was extremely terrible, plus when they shot this scene they'd already gone over budget and basically wasn't looking for any fancy smancy work. This sequence is like the rawest part of the film when it comes to the camerawork and editing.
