Just to put things in perspective. Beets, celery, eggplant, lettuce, radishes, spinach, and collard and turnip greens contain nitrates that convert naturally into nitrites in your stomach—where some of the nitrites combine with amines to form nitrosamines, some of which are known carcinogens. This natural chemical reaction presents no known problems for a healthy adult.

Modern refrigeration is a wonderful thing! No nitrites for me, please.

Refrigeration still has thresholds in keeping the microbial load low. Perfect reason why preservatives were discovered. I'd rather have miniscule accumulated cancer risk from nitrites rather than die within a few hours due to botulism.

There are pre-cooking treatments done to cured meat to wash off nitites, remember, nitrites are still ionic even the nitrosamine molecule, so it can be washed off with boiling.

Here in the Philippines, botulism deaths are near to none! Beause we boil the first!

Where is the control group? Maybe some people that eat certain cured meats also have an atrocious diet! Is it regional, cultural? Mississippi is the fattest state in the union. How much bacon do they eat in addition to all that other garbage?

anytime I see a doctor or an "expert with a white coat" talking about something AMERICANS and THE REST OF THE WORLD has eaten for centuries, I just chalk it up to gov't regs.
I think there is a french word or at least a word that has the letter "F" in it concerning
my felings about our "gov't". It ends in "em"

It ends in "em ALL" You have to eventually die of something. As Larry said,"Old age".
