It appears that the trigger zone completely surrounds the horn, unfortunately, so bypass...

The second isn't going to happen.
Even if you roll right next to the horn, you can't see the R2-sign of being able to blow the horn. This may mean that the "horn data", e.g. the cutscene loading trigger of blowing the horn is not available before the fight. Much like the "bull wheel"-rotating option is simply not available if you get to it too early.
I'd like to note that you can do the whole fight from under the platform. I found it somewhat humorous.
