As a youth, I snared wild rabbits for food in nortyhern Ontario. .A French-canadian taught me a fast way to skin. Not very fancy but fast. Basically hold the rabbit by the feet and tear the fur (by hand) down the legs and the whole fur comes off like a glove-up to the front feet and head.

thanks for the comments there is a bit of hair gets on the rabbit after skinning but not a hole lot and i dont use my rabbits right away i like to put them in water over night in salt water which takes away any bitterness and the hair from skinning
