Hey don't diss vim. :-( I use and love every kind of tool, and vim has a special place in my heart. The 'modal' workflow, maps, macros, scripting makes it hell awesome. I use it everyday for editing and I haven't missed many features of GUI editors. Maybe you lose the WYSIWYG GUI editing for example, but if you use vim as a text editor, and a different tool as the GUI editor (following the philosophy of keeping a program for what it is, and what it is only), things might get real good...

The biggest showstopper is that GIT doesn't support partial checkout, i.e. checking out a subdirectory only (and merging it back).

Why should I fetch the whole project with 2GB if I am only to improve some SQL queries stored in a file of 10kb somewhere? *Nada*

You shouldn't put your whole project in one git repository, there is no point to it either.
