I believe it's a theorbo or archlute but since I've been a new listener I can't tell you with 100% certainty. The theorbe can be rather long - longer than the one you are listening here but the sound is absolutely beautiful. Recordings rarely give you the feel of the instrument.
What he's playing is a lute-like instrument, but it must have been made just for him. Doesn't each course have only one string on it? He plays it just like a guitar. Sounds lovely and looks great, but not a recreation of any lute Vivaldi would have seen.
Single-strung courses were not unheard of, the use of double courses being optional. The archlute seen here is simply not utilizing all of its tuning pegs. Furthermore, the diapason strings are never double-strung and the highest course, known as the _chanterelle_, is typically single-strung while sometimes it's neighboring course is single-strung as well.
