    Bonjour,

    La réponse à la première question est : cela dépend de votre râpe, mais je dirai entre 3 et 4 mm.

    Pour la deuxième question, il n'y a pas vraiment de perte, sans doute 5 à 10% à cause de la fermentation et qu'il y a une partie d'eau qui s'évapore avec le gaz carbonique.

    Merci beaucoup. J'avais réussi avec une recette écrite mais c'est très intéressant de voir comment vous faites. Je n'avais pas écrasé le choux autant que vous le montrez et j'avais mis le poivre et le genevrier à la cuisson. Je vais faire comme vous montrez.
