Depends on your linux distribution. Generally, it's not difficult. On Kubuntu, you must install kubuntu-desktop so you can choose KDE from the login manager. You can then remove gnome if you want, but I dunno if you would need to remove it package by package or if there's a faster way.
If you mean files YOU made there shouldnt be a problem running sudo apt-get uninstall ubuntu-desktop That will uninstall every application under GNOME... User made files (The ones in Home) wont be affected.

sudo apt-get uninstall ubuntu-desktop
That will uninstall every application under GNOME...
User made files (The ones in Home) wont be affected.
