I get it. But one thing thats occurred to me is that in order for this to be accurate, the marks on the chocolate would have to be at the very tops or bottoms of the wave as the distance decreases as you move up and down the wave. So if we do this experiment surely we'd have to ensure that the bottom of the wave is at the surface of the chocolate and not below it. Is this correct?

The wavelength in a waveguide or rectangular cavity isn't necessarily the same as in free space, as the direction of propagation isnt just in one single direction.
