Is it still possible to get traditionally somked ham or bacon? Instead of buying the ham or bacon injected with smoked flavour?

yes! i work at my father's butcher shop where we do just that, old fashioned curing and smoking. We have a brine that we cure in, and a smoke house fired by real wood right in the smoke house, using mostly maple and cherry wood for the smoke fire.
