That technique is called "Slipping" - at least in Germany, not sure if it's the same in other languages. Anyway, if you have to land INTO the wind, you're wings are going to generate more lift, than the flaps can cut. In that case, you "slip" the plane sideways, so the air has less surface area. This technique is also used a lot on gliders, because most of them have only very small flaps (many of them do not even have flaps, the just have brake "sheets") - Did it quite a lot of times myself
