America's Test Kitchen is a real 2,500 square foot test kitchen located just outside of Boston that is home to more than three dozen full-time cooks and product testers. Our mission is simple: to develop the absolute best recipes for all of your favorite foods. To do this, we test each recipe 30, 40, sometimes as many as 70 times, until we arrive at the combination of ingredients, technique, temperature, cooking time, and equipment that yields the best, most-foolproof recipe.

Each week, the cast of America's Test Kitchen brings the recipes, testings, and tastings from Cook's Illustrated magazine to life on our public television series. With more than 2 million viewers per episode, we are the most-watched cooking show on public television.

More than 1.3 million home cooks rely on Cook's Illustrated and Cook's Country magazines to provide trusted recipes that work, honest ratings of equipment and supermarket ingredients, and kitchen tips.

Better clear your calendar if you want another 3 strips of bacon.

    I just tried this.

Tastes like it was sizzled on the buns of Jesus himself (but then, what bacon doesn't?)

The problem is the cleaning. Best hire a butler if you're going to try it this way, as the cement left on the bottom of the pan doesn't like to move.

Personally I prefer oil and a low heat, you can get it tasting just as good with a little practice. ;)

Too many dishes? How, all they do is out water on it. Do you wash a cup that just had water in it, and no one drank from it? Because that's fucking stupid

I bake bacon. line a sheet pan with foil, lay out the bacon, cook at 350º until done. No muss, no fuss, and cleanup's a breeze!

This is absurd. Start with a cold pan on medium high heat and turn it down when it sizzles. Turn it over when you see a foam around the edges. Next batch will tasted even better being cooked in the fat.

Don't boil bacon. It gets rid of the smoky flavour and you end up with pancetta. Just put it in the oven on a low temperature.

They always take extra steps that no one would ever do. Takes too much time and makes too many dishes.

Why would any idiot use oil or water... it is just about low temps... the bacon will fry in its own fat perfectly...
