I have two suggestions as far as your legs swinging back. One is to tie the stirrups to the girth - this is kind of cheating as you should be holding your legs there on your own, but it will help you feel where they should stay. Then, taking your stirrups away and jumping without them will force ...

@Lagolop - I do know horses who do that! They will actually go out of their way to jump things for the heck of it. Most horses won't, but all of the ones I've ridden would much rather be out on the course than doing dressage!
