I would really like to know what you are using to place water in the nether. It's not supposed to be possible, as far as I'm aware - emptied buckets evaporate instantly... RP thermopiles cause snow to sublimate instead of melt... ...

I highly recommend putting out the fires below a glowstone deposit before knocking it down. Any dust which lands in a fire will burn up. Just punch the block surface that the fire is sitting on to smother flames.
