I know lots of basics for chinese cooking and I also know many of the restaurant techniques and I agree with you. Homemade is much better and I tend to substitute the MSG with a pinch of white sugar to balance the salty soy sauce flavor. But I have one problem, sometimes when i combine the sauce ingredients together it tastes very very good. But when I add it to my chinese cast iron wok from china the flavors of the sauce disappears. What could this be?
