Nice video Esther but I strongly disagree with your assertion that flash pasteurized wine can't age.
Look at highly regarded kosher producers from California; Herzog Wine Cellars & Hagafen Winery. Wines from these producers age gracefully for 5, 10 even 15 & more years.
