I don't think it's relevant whether cows/chickens/pigs pass the 'mirror test' for self awareness. They feel pain in the same way humans do, are capable of suffering, and have an intensely strong desire to protect their young.

Animals (besides humans) eat meat because it is required for their survival. Humans don't have to consume animal flesh to maintain healthy, balanced lives. They do it out of choice.
