  • Hey JD, that "strange fitting" you show looks a lot like a pin-lock gas connector (without the actual fitting) for the Coke soda kegs. As a homebrewer who uses Coke soda kegs for my beer, it looks unmistakable...just FYI. While I'm not as good at my second hobby (metal detecting), I found my first silver today...a 1957 Roosie dime in great shape! Thanks for the videos and the inspiration - I had to wait 6 months to see a silver edge (I don't get out much!).

  • The yeast did not grow. I'll admit I've only done this a few times and thought making a video of the process would be useful (without much desire for the yeast strain). I suspect the bottle may not have been optimally handled (i.e., the yeast were old and tired/dead). I don't think it's necessarily a problem with the procedure...I have now successfully cultured Pacman yeast from a Shakespeare Stout bottle three times out of three attempts!

  • I personally do not skim the hot break. This is merely a personal preference as there is no clear evidence that I have seen that it matters either way (though you can ask 3 homebrewers and they'll give you 3 different answers!). Do whatever works for you.

  • It is true that you don't want to repitch yeast from a high gravity (HG) previous batch directly. However, culturing the yeast is fine. In fact, it is probably this exact method that has led to more alcohol-tolerant yeast strains. If it survives a HG fermentation than it will likely be a stronger member of the "society". Of course, you will need to propagate it from a plate to clean out the lesser members of the "society". Mutations are likely so it may not be the same yeast afterwards!

  • With this method, you don't want to freeze the cultures, just put them in the fridge. To freeze, you would need glycerol to prevent rupturing the cells (too much trouble, in my opinion though it will last longer). Each time I streak to a new plate, I get a pure sample, so the "generation" term doesn't mean what it does when one repitches yeast. In those cases, each generation carries with it some contamination. In this case, you can go forever (with some mutations likely).

  • Depends on several factors (health of yeast after previous fermentation, storage conditions, strain, etc.) so there's no absolute answer. You can get a good read on the yeast by looking at the color, dead yeast is much darker than viable yeast. As the slurry turns light brown, it becomes less viable. I suggest to ALWAYS pitch an aged yeast cake to a starter (say, 1L) to be sure there's enough viability. Happy Brewing!

  • Indeed, pressure cooking (if done correctly) will kill everything. This procedure is merely to make and keep the wort that will eventually be used to grow yeast. Thanks for the comments, I agree that a more patient procedure would include cooling in the pressure cooker. In my case, I do multiple batches in a day and prefer to keep the cooker in action. In ALL cases, one should be extremely careful not to bang the jars (they are glass, after all). YMMV!

  • Well, I think it's because YouTube has increased their filesize limit (2 GB, I think) so I was able to save it as a DV AVI. With my other videos, the limits were lower so I had to step it down quite a bit. Otherwise, nothing fancy, my camcorder is several years old and the same one I used for all my videos.
