☆Tart Dough (same as my very first baking video) Ingredients: Flour - 150g: 5.2oz. :1+1/4 Cups Butter - 70g: 2.5oz.: 1/3 cup Egg Yolk - 1 Sugar - 30g: 1 oz.: 1/8 cup: 2 TBS Salt - a Pinch
Directions: Leave all butter at room temperature first... Grease the pan with the butter, shift some flour, leave it in the fridge Turn on the oven at 180C
1. Whip butter, sugar and salt until the mixture becomes creamy 2. Gradually add egg yolk; mix well 3. Shift in flour into the mixture, and make it all into a ball, put the saran-wrap and rest it in the fridge for at least an hour 4. On a clean surface, cover in a saran-wrap, place the dough, and with the saran wrap on top of the dough, make a circular movement with your palm to out the dough 5. Pick up the dough including the wrap, and gently place the dough on top of the cool tart pan, and shape on the pan; and leave it in the fridge until ready to pour some cheese mixture into it.
☆Double Cheese Cake Filling Ingredients: Mascarpone Cheese, 100g: 3.5oz. Cream Cheese, 100g: 3.5 oz. Sugar, 50g: 1.8oz. Whole eggs, whipped, 2 Heavy Cream, 100g: 100mL: 3.5oz. Lemon Juice, 1 TBS: 15ml Flour, 1TBS 1/4 cup each of blueberries, raspberries, blackberries and strawberries
Direction: Leave cheeses in room temperature 1. Whip both mascarpone and cream cheeses together in a large bowl until soft 2. Add sugar; whip until creamy 3. Gradually add whipped egg into the mix, mix well 4. Add heavy cream and lemon juice into the mix, mix well 5. Shift flour and add into the mix; mix using a spatula
Making of the Cake before baking: 1. Pour cheese mixture into the tart pan, filling 80% 2. Place berries on top of the cheese filling; then pour the remaining cheese mixture. 3. Bake at pre-heated oven at 170C:338F for 30 min without the foil on top and 15 min with the foil, then another 15-30min without the foil. Leave on a rack to cool.

RECIPE: 1. measure up 140 g of eggwhite in one bowl. 2. measure up 190 g almond powder/flour, and 190 g powdered sugar in a second bowl 3. measure up 60 g of sugar and 140 g of powdered sugar in a third bowl. 4. Whip the eggwhite almost meringue-like, but not all the way! Add the sugar/powdered sugar bowl mixture and whip until it's fully blended. If your batter starts to climb your whip-tool (I have no idea what's it's called..) - that is a good sign! 5. Add the almond/powdered sugar mixture to the batter, gently turn the dry ingridients into the batter - don't overmix! Add color. Keep in mind that adding liquid color changes the batter density, the same goes for powder color, keep that in mind and keep the color amount as little as possible. Gently mix the color into your batter. 6. Put the mixture into your pipe and pipe out small round equal sized macarons on your owen plate. 7. Tap your owen plate from underneath to beat any air out of the macarons and make them set a little bit. Smack the plate hard!! :P 8. You can leave them on the plate for 45 min if you want to - otherwise, put them in the owen right away. 9. Owentime either 8-10 min in the middle of the owen (125 degrees celcius), or 20 min in the lowest section of the owen. I find that 20 min works best! 10. Leave them to cool off 11. Add filling and find a matching lid.
