Boost Issues

That's completely normal!
The K03s turbo on the 1.8t can't keep the boost up as the revs rise. It's not big enough.
Stock turbo boost pressure should only be about 8 PSI anyway.

@djltd69 What makes you say that? With a proper turbo and supporting mods and internal work, there's no reason whay you can't see that sort of power.

SEAT Toledo Cold Start
This is the noise my toledo makes on a cold morning. Does it sound normal, or is there something wrong?
There are no major exhaust leaks etc.
