Traveling is one of the best things about motorcycling. If you want to ride some dirt get a dual-sport. If you like the sportiness of a motorcycle and like the road only, get a sport-tourer. As a beginner you could definitely start on anything 600 and lower I'd say. But keep in mind 600cc sport bikes with a inline-4 engine are going to have A LOT of power and are not as friendly to newer riders. I'm sure you could easily tour on the Ninja 250.
